Born and raised in Yokosuka, Japan, Michael Hide Cardenas spent his early career as a teppan chef, after graduating from the Benihana Chef School in New Orleans. Michael worked at Teru Sushi for two years prior to his recruitment at Chaya as a manager. As Michael climbed the ladder of success he joined the Matsuhisa team as a manager and again was quickly promoted to General Manager.
After five years as a General Manager of the Matsuhisa restaurant in Beverly Hills, he left in 1996 and went on to open the first Sushi Roku concept as the proprietor and opening General Manager/Partner with the Innovative Dining Group in July of 1997.
Michael’s pure passion and experience along with his knowledge of food, wine, and culture make him a key ingredient within the Innovative Dining Group. With more than twenty years in the Japanese restaurant industry, he continues to advise and coach the managers and chefs in the “art of fine wining and dining.” Michael speaks fluent Japanese and continues to travel to Japan and other countries, several times a year. |

Chef/Partner Josef Centeno’s approach to cuisine enlarges upon a rigorous training blended with a diverse ethnic heritage. The 35-year-old has been nurturing diners for the last 14 years, beginning his career at Daniel, La Cote Basque and Les Celebrites in New York. He was executive chef at Meson G and Opus in L.A., chef de cuisine at Manresa in Los Gatos, and also worked at other prestigious California establishments Charles Nob Hill and Aubergine. His culinary ingredient-driven inventiveness draws on inspiration from modern and traditional French, Mexican, Japanese and Catalan cuisines. |

Manny graduated from the Ohio State University with a degree in Finance and Economics. He comes to Arigato Cat, LLC with 16 years of professional experience. Manny has worked for fortune 500 companies such as MCA/Universal, American Golf and Fox Sports. He specialized in financial planning, reporting and analysis. Manny has consulted for various start-up companies Top Tier Placement, and Resumewall.
With a passion for food, Manny completed studies at the Epicurean School of Cooking in Los Angeles, and has worked in various capacities in restaurants in the Southland. He has owned and operated a private chef service and catering company.

Kevin Travis has been in the restaurant business ever since he first moved to Los Angeles 10 years ago. He got his start working for the Innovative Dining Group where he rose from the ranks of Room Service attendant to General Manager of the largest restaurant in the company.
His love of food and service can only be rivaled by his passion for wine and spirits. Kevin has traveled around the globe visiting vineyards and studying his craft. He is from Grand Junction, Colorado and his hobbies are music, outdoor life and playing a little poker and he is currently living the good life in Santa Monica, California.
His motto "Food and wine is an essential part of living life".
